Chicken Thukpa

Ingredients for Chicken Thukpa :  1/4 cup Plain Noodles cooked as per package instructions, 2 tbsp Mixed Vegetables – 2 tbsp chopped, 1 Whole Chicken Legs thighs and drumsticks, 1 Onion small, finely chopped, 1/4 cup Spring Onions chopped, 2 Garlic Cloves minced, 1 Green Chilli finely chopped, 1/2 tsp Ginger minced, 1/2 cup Vegetable Stock, Juice of 1/2 Lemon, 1 table spoon Edabba special Chinese Mix Masala, handful Coriander Leaves chopped, Salt as per taste, 1 1/2 tbsp Vegetable Oil, 1/2 tsp Soy Sauce, 1/2 tsp Honey

How to make :

Heat oil in a deep pan over medium flame. Add the chicken and cook for 5 to 10 minutes, turning from time to time. Now add the onions, spring onions, garlic, green chillies and ginger. Mix and cook for 2 to 3 minutes. Add the vegetable stock. Add the lemon juice, soy sauce and honey. Add salt as per taste and mix well to combine. Cover the pan with a lid and reduce flame to low. Allow it to simmer for 15 minutes. Remove the chicken and shred it. Add the shredded chicken to the pan. Add the mixed vegetables and the cooked noodles. Simmer for 10 minutes. Switch off flame. Garnish with coriander leaves. Serve Hot.

Ingredients For Marination : – 1 kg mutton curry cuts from shoulder and shank part, 1tsp red chilli powder, 2 pinch turmeric powder, 1 tsp roasted cumin powder, 4 tsp beaten curd , 2 tbs ginger garlic paste 70% ginger 30 %garlic, 2 tbs coriander powder, Salt to taste

For Gravy:-   1 tsp garam masala powder, 2 bay leaves, 350 gm sliced onion, 30 gm copra, 1 tsp poppy seeds, 6 green chilli paste, 60 gm Tomato paste, 10 gm Whole garam masala, 200 gm ghee

Process :-  In a mixing bowl, add mutton, ginger garlic paste, beaten curd, red chilli powder, turmeric powder, garam masala, cumin powder  and marinate well and keep it aside for 1 hour.  In a large saucepan, heat ghee and splutter whole garam masala and saute well.  Add sliced onion and saute till golden brown, add the marinated mutton and saute for 4-5 minutes. Add salt to taste, poppy seeds, copra and green chilli paste. Cover and let it cook for 30 minutes. Add tomato paste cook until mutton is tender. Ready to serve with naan.
